Pastry Chef Kyle Smothers has been baking since he was a child playing “restaurant” with his sibling and cousins and, yep, he was the cook.  The love of taking care of food and people took root and the rest is history in the making.

    Thanks to a small family Italian restaurant that gave him a chance, Kyle parlayed his natural talent for baking and learned breads, pizza and was the dessert assistant.

    Confirming that he was on the right track to a career, Kyle turned serious and pursued and received a Culinary Degree in Baking and Pastry Arts.

    Walt Disney tapped him for a member of their team where he learned speed, volume and consistency.  Kyle’s “Fruity Pebbles Éclair” has been selected to be featured at Mickey’s Very Merry Christmas Party, 2018, which is a huge honor.

    Coming to us from Ophelia’s in Sarasota, Florida (where he was the Pastry Chef), Kyle brings with him tons of energy (maybe he is enjoying his own products and the sugar is kicking in?), his talent and his commitment to being the very best at what he does.  He loves a perfect loaf of country bread with the chewy center and perfectly crusty top (it takes about 3 days to make). You will find some version of that with our nightly bread service here at the restaurant.  Also dear to his heart is the French Macaron because the technique to produce that cookie must be perfect and the result is just a wonderful treat.  Kyle loves to let his fresh ingredients shine and he considers it his mission to make sure they do.  The Candied Plums served with his cloud like Churros and Vanilla Mousse are just beyond spectacular.  He does the ingredient justice.
